Can i use olive oil for butter in shortbread?
Or use butter but add a little olive oil. I found it easier to whisk the mixture. Now i am wondering if i can use all olive oil instead of butter, since its healthier.
Personally, I wouldn't. Shortbread is supposed to be dry and flaky and using oil in baking helps keep the cake or cookies moist and soft.
Also, the olive oil might give the shortbread a funny taste.
Bear in mind as well that when you cook with olive oil it isn't actually that much healthier. Olive oil denatures when cooked so it loses some of its healthy properties.
